Boiled Pork and Cabbage Dumplings

Ingredients
1 pack of store bought dumpling wrapper
1 lb ground pork
1 lb Chinese cabbage (shredded)
1/3 cup green onions (cut on an angle)
1 tb minced ginger
2 tbs Soy sauce
1 tb sugar
1 t cooking wine
2 tbs vegetable oil
a pinch of salt and pepper
Dipping Sauce
1 tb minced red chili pepper
1 tb sesame oil
1 tb rice vinegar
4 tbs soy sauce
½ tb minced garlic
Directions
Mix the above ingredients except the Chinese cabbage. Blanch the Chinese cabbage in boiling water for 1 minute and squeeze excess liquid. Add cabbage and mix thoroughly to make dumpling filling.
Place 1 tb of filling into the center of the dumpling wrapper, wet the edges and pinch to seal or using a dumpling press to seal.
Bring 8 cup of water to a boil. Drop dumplings one by one into the boiling water. About 20 a batch. Stir with a large spoon to prevent sticking to the bottom of the pot. Cover with lid and bring to a boil. Add 1 cup of cold water into the pot and bring it to a boil again. Repeat 2 more times. The dumplings will be cooked.
Mix the dipping sauce ingredients. Dip dumpling into the sauce and serve hot.
